Healthy Thanksgiving Turkey Leftover Recipes
Did you know, it’s a proven fact that any calories consumed from pie during thanksgiving dinner don’t count against you as long as you get back to eating healthy, unprocessed foods the following day? So, talkin turkey today and what to do with all of those leftovers. Now is a great time to get back on track. Some of my favorite healthy Thanksgiving turkey leftover recipes below:
Healthy Thanksgiving Turkey Leftover Recipe #1- Simple Mini Turkey Wraps
Use your yummy turkey leftovers to make these mini turkey wraps!
Ingredients:
3 leaves of butter lettuce
4 oz turkey
1 tbsp goat cheese
1 tbsp dried cranberries
Directions:
Fill each lettuce cup with turkey then top with goat cheese & dried cranberries. Enjoy!

Healthy Thanksgiving Turkey Leftover Recipe #2- Turkey and Sweet Potato Frittata
Ingredients:
6 large eggs
1 tsp Himalayan salt
fresh cracked black pepper
2 teaspoons olive oil
1 small onion, chopped
12 ounces Sweet Potatoes (if already cooked and leftover cut them into small cubes) if adding them peel sweet potatoes and cut into small cubes
1 tsp fresh or 1/2 tsp dried thyme
1/4 teaspoon garlic powder
1/4 teaspoon paprika
6 oz leftover turkey breast, chopped
1 cup baby spinach, chopped
Directions:
Preheat the oven to 400°F. Crack the eggs into a large bowl. Add 1/4 teaspoon of the salt and a pinch of fresh cracked pepper and beat until blended. Heat a 10-inch nonstick oven safe skillet over medium heat. Add the oil and onions to the pan and cook until the onions are golden, 5 to 6 minutes. Add the sweet potatoes (if raw) and thyme, season with 3/4 teaspoon salt, garlic powder, paprika and pinch of black pepper. Cover and cook the sweet potatoes over medium-low heat, until crisp and tender,stirring occasionally, about 12 minutes. If sweet potatoes are already cooked then add them into the skillet last, after the spinach. Add the chopped turkey to the skillet and stir to combine. Add the spinach, and cook until wilted, about 2 to 3 minutes. Um…Yum!
Serves 4
Healthy Thanksgiving Turkey Leftover Recipe #3- Turkey Cran Salad
Ingredients:
3 cups cooked turkey, shredded
½ cup plain greek yogurt
½ cup dried cranberries
¾ cup celery
¾ cup pecans or walnuts (optional)
¼ cup cranberry sauce
⅛ tsp himalayan salt
⅛ cup ground black pepper
Directions:
Combine all ingredients in a medium size bowl stir well to combine. You may serve immediately or cover and refrigerate for more flavor to come through.
Serve over greens or wrap in lettuce leaves.
Serves 4
