Chocolate Chip Peppermint Pancakes
Something about the holiday season gets me really craving something sweet! These Chocolate Chip Peppermint pancakes are all clean ingredients with no funky artificial sweeteners added so you can have the sweet without the guilt.
Ingredients:
3 cups almond flour
2 tbsp baking powder
2 tsp salt
2 tbsp coconut sugar
2 ½ cups almond milk
2 eggs
6 tbsp butter, melted
2 tsp peppermint extract
6 crushed candy canes (optional)
½ cup chocolate chips
Directions:
In a large bowl mix all dry ingredients. In a smaller bowl whisk together the eggs and almond milk. Combine the egg and almond milk mixture with the dry ingredients, mix well. Add peppermint extract; batter will have few lumps. Pour about ¼ cup batter onto prepared cooking surface over medium-high heat. Sprinkle chocolate chips and crushed peppermint pieces onto pancakes while they are cooking (amount is up to you). Flip pancakes when small bubbles start to form. Cook until golden.
Optional: Serve with melted butter and pure maple syrup, or top with a dolop of whipped cream and crushed candy cane sprinkled on top.
