Quick Chicken Salad Recipe with Cranberry
I love this quick chicken salad recipe with cranberry from my Stay Lean Recipes I book, I could probably eat it 3 times a week. In fact, I probably do. It’s very quick and simple to make as well as Jump Start approved, gluten free AND delicious! Want some?

Ingredients:
1 cup salad greens of your choice
1 skinless boneless chicken breast- grilled & chopped
1 tsp. pine nuts
1 tbsp. goat cheese
1 tbsp. dried cranberries
Directions:
For dressing, mix 1 tbsp olive oil & 1 tbsp balsamic vinegar.
In a bowl add salad greens, chicken, pine nuts, and cranberries. Toss with dressing. Top with goat cheese. Yes, it’s THAT simple! Enjoy!
