You know what they say, “an apple a day keeps the doctor away.” Here are some quick and delicious healthy apple recipes so you can be sure to get your apple a day in!
Healthy Shrimp Salad with Apple Chips
Is your stomach ever at war with what to eat? Salty or sweet, sweet or salty? Ingredients:
6 oz jumbo shrimp
1 cup arugula
1 cup spinach
1 tbsp. feta cheese
1 apple, sliced and baked
1 tsp. minced dried onion
2 tsp olive oil
Directions:
Preheat oven to 225 degrees. Slice 1 apple widthwise. Arrange apples slices on a metal baking sheet. Bake until apples are dried and edges curl up, 45 minutes to 1 hour. Transfer apple chips, using a metal spatula, to a wire rack until cooled and crispy.
Heat 2 tsp olive oil in a pan and cook shrimp. Combine arugula, spinach, apple chips, cooked shrimp and dried onion in a bowl. Toss with dressing. Top with feta cheese.
For dressing, mix 1 tbsp. apple cider vinegar, 2 tsp. olive oil, and 1 tsp. Dijon mustard
Apple Chia Seed Coleslaw
½ cup shredded carrot
1 granny smith apple sliced
1 cup green cabbage
1 cup purple cabbage
1 lemon juiced
1 tbsp avocado and 1 tbsp greek yogurt instead
1 tbsp poppy seeds
1 tsp ground pepper
1 tsp himalyan salt
1 tbsp apple cider vinegar
2 tbsp olive oil
Toss!
Chicken Apple Lettuce Wraps
Ingredients:
4oz shredded cooked chicken
1/2 apple sliced
1/2 cup grapes sliced
1 tsp dijon
2 tbsp Greek yogurt
1 tbsp crushed walnuts
Romaine lettuce as cups
Directions: Mix chicken, apple, grapes, yogurt, and mustard. Top lettuce cups with mixture then sprinkle with crushed walnuts and enjoy!
