Geek Out Over This Healthy Greek Salad
Healthy Greek Salad in a matter of a just a few minutes!
Healthy Greek Salad
Ingredients:
Romaine Lettuce
1 cup Cucumber
1/2 cup Tomato
1/2 cup Green Pepper
Red Onion – optional
1 tbsp Feta Cheese
5-8oz of Cooked Shrimp
Dressing:
1/4 cup Olive Oil
3 tbsp Red Wine Vinegar
1 tbsp Oregano
Salt + Pepper
1/2 Juiced Lemon
Wash your romain lettuce and place some full pieces into a bowl. This step is purely for show 🙂 Then I break up a bunch of romaine to fill the large salad bowl. Tip: use your hands to break it instead of cut it with a knife — if you break instead of cut, it will stay greener longer. Then add diced cucumbers, chopped tomatoes, and chopped green pepper. I personally add red onions, but skip these if you don’t like them or if you have a hot date! Add feta and top with shrimp. You can either use shrimp plain, or sauté over low heat with some coconut oil. If you don’t like shrimp, feel free to use your preferred choice of lean protein!
I am a sucker for making my own dressings because so many of the store bought dressings are packed with yucky ingredients. So for this particular dressing I mix olive oil with red wine vinegar (the special secret ingredient!), with oregano. I add pink himalayan rock salt and pepper to taste. Then I squeeze half a lemon over everything at the very end.
