Eat Green All Day on St. Patrick’s Day
Hey…you don’t have to just wear green on St. Patrick’s Day, you must eat green on St. Patrick’s Day, too! You heard me; new rules! Stop, don’t pinch! I ate green all day! See look at my tongue LOL. Seriously though…eating green should be something that happens MORE than just on St. Patrick’s Day!
Green Zinger Juice
Ingredients:
½ apple, sliced in chunks
¾ cup spinach
1/3 cucumber, chopped
1 celery stalk, chopped
1 tsp. fresh ginger root
1/3 bunch of parsley
1 lime peeled
½ lemon peeled
Directions:
Cover with water and blend.
Split Pea Soup
Ingredients:
3 large carrots, sliced
4 stalks celery, sliced
1 white onion, chopped
1 tbsp coconut oil
2 tsp dried thyme
1 tbsp garlic powder
9 cups veggie or chicken stock
3 cups dry split peas
Directions:
Saute the onions, carrots, and celery in coconut oil in a pot on the stove until soft. Combine all remaining ingredients in the pot and bring to a boil. Reduce heat and cook until peas are soft.
Chicken and Greens Salad
2 cups shredded roasted chicken
1/2 sliced red onion
2 tbsp goat cheese cheese
1/4 cup olive oil
3 tbsp red wine vinegar
1 tsp oregano
salt an pepper to taste
