Thai Dirty Rice
Ingredients:
1/4 cup cooked white rice or cauliflower rice (recipe for the cauliflower rice in my book)
1 tbsp coconut oil
1/4 cup chopped pineapple
2 tbsp chopped basil
4 oz cooked shrimp
3 mini sweet peppers chopped
*add your favorite hot sauce or red pepper flakes if you like spice*
Directions:
Heat coconut oil in a medium sized skillet over medium heat. Sauté peppers until soft, and then add in the pineapple for a minute until warm. In a large mixing bowl, add your cooked rice, cooked shrimp, peppers, pineapple, and basil.
Thai Cucumber Salad
Ingredients:
1/2 cucumber, skinned and diced
1/4 cup pineapple, diced
1/2 serrano pepper, diced
1 tbsp cilantro, chopped
1 tbsp mint, chopped
juice of 1 lime
Directions:
In a mixing bowl add all of the ingredients. Top with lime juice, mix together, and let sit for about 30 minutes in refrigerator. Enjoy!
Dairy-Free Coconut Custard
This is just a treat so enjoy in moderation 🙂
Ingredients:
1 cup coconut milk
4 egg whites
2 tbsp grade b maple syrup
2 tbsp chia seeds
1 tbsp coconut flakes to garnish *optional*
Directions:
In a small sauce pan, heat coconut milk on low until warm. Add in egg whites and syrup.  Whisk until the mixture starts to get creamy. Remove from heat and set aside to settle. Whisk in the chia seeds and top with coconut flakes! Chill and enjoy.
