Healthy Buffalo Chicken Sandwich
Ditch the bread and use sweet potato instead! Have yourself a yummy, healthy buffalo chicken sandwich! Great healthy alternative for those snacky days!
Ingredients:
1 sweet potato, sliced lengthwise, about ¼” thick
4 oz shredded chicken
2 tbsp red pepper sauce (you can make your own DIY hot sauce)
1 tbsp blue cheese crumbles
1 tbsp chopped celery
Directions:
Shred your freshly boiled or grilled chicken and put it in a bowl. Add your celery and stir in your red pepper sauce. Cut your sweet potato lengthwise — about ¼ thick. Put the potato in the toaster until soft *toast multiple times if needed, as some toasters are stronger than others*. Toast each side. Top with buffalo chicken mixture and then cheese!
