Turkey Stuffed Peppers
Turkey Stuffed Peppers are easy, delicious, and nutritious! Cook an assortment of colors for a colorful meal that the whole family will like! 🙂
Ingredients:
3 bell peppers
1 tbsp coconut oil
½ diced yellow onion
4 cloves garlic, minced
½ cup fresh diced tomatoes
1 lb ground turkey breast
2 tbsp feta cheese, crumbled
1 tbsp pine nuts
¼ cup fresh basil
½ tsp himalayan salt
¼ tsp ground pepper
Directions: preheat oven to 375 degrees. Cut bell peppers in half, remove seeds. Set them on a baking sheet and set aside.
Heat coconut oil in a medium skillet over medium-high. Add onion and cook, stirring occasionally until translucent. Add the garlic and tomatoes and let cook until warmed. Add turkey and cook until crumbled. Stir in basil and season with salt and pepper. Spoon mixture into peppers and cook for 20-25 mins. While peppers are baking cook pine nuts in a sall skillet over medium heat stirring constantly until toasted, set aside. Top with feta and pine nuts.
