Balsamic Watermelon Salad

My taste buds are loving the mix of flavors in this Balsamic Watermelon Salad! Such a refreshing, healthy side salad. Watermelon is an amazing fruit to add to your menu. Did you know that it is more than 90% water and it packs in about 1/3 of the recommended daily value of vitamins A, C and potassium?! This recipe serves 4-6 people and is best paired with a side of a protein of your choice.

Ingredients:

1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon Himalayan salt
1/2 teaspoon ground black pepper
6 cups diced watermelon
1 cup fresh blueberries
1/4 cup chopped fresh mint leaves
1/2 cup crumbled feta cheese

Directions:

In a large bowl add your watermelon, blueberries, and mint leaves. Top with oil, balsamic, salt and pepper then toss. Lastly, top with feta cheese then serve!
