Healthy Albondigas Recipe
Today we are making a healthy Albondigas recipe! YUM! It’s a traditional Mexican soup typically made with really savory meatballs, but for this healthy version, we are going to make them using turkey. Perfect to make on a chilly evening (or afternoon for that matter!). You can spice it up as much as you want!
Ingredients
For the Meatballs:
1 lb Ground Turkey or Beef (I use ground turkey for a healthier version)
1 egg, beaten
2 cloves of garlic
1 carrot, grated
1/5 cup cooked rice (white or brown)
1/2 cup cilantro
1/2 tsp salt
1/4 tsp pepper
1 tsp cumin
For the base:
6 cups bone broth (or chicken broth)
1/2 c onion
16 oz diced tomato
1 c celery
1/2 tbsp cumin
1 tbsp oregano
1 c cilantro
1 large zucchini, cubed
Directions:
To make the meatballs, mix all of the meatball ingredients into a bowl. Create meatball sized balls by rolling in between your hands. Set aside. In a big pan bring the broth to a boil. Add in the tomatoes and stir. Next add all of the broth seasoning. Add everything except the zucchini. Simmer for 10 minutes. Bring it to a boil again, add the meatballs and cook for another 10 minutes. Add in the zucchini and cook for the last 10 minute round. Serve into bowls and garnish with avocado. If you like it spicy you can some extra heat with jalapenos or cayenne.
