A Perfect Summer Dinner
This light, but hearty meal will leave you more than satisfied! And I’d be willing to bet that even the kids will like it! Score! That’s what I call a perfect summer dinner.
Bacon and Balsamic Brussels With Almonds
Ingredients:
1 lb brussel sprouts, shredded
4 slices lean turkey bacon, chopped
1 tbsp ghee
1 clove garlic, minced
3 tbsp balsamic vinegar
½ cup chopped almonds
pinch of red pepper flakes
¼ tsp salt
⅛ tsp pepper
cranberries (optional)
Directions:
In a large skillet cook chopped bacon until crisp then add the garlic and cook for an additional minute. Add in the brussel sprouts, cranberries (optional), almonds, red pepper flakes, salt and pepper. Stir well until combined and saute for several minutes. Drizzle in the balsamic vinegar and continue cooking until the brussels are soft.
Almond Crusted Coconut Chicken Tenders
Ingredients:
1.5 lbs chicken tenders
1 cups ground almonds
½ tsp salt
½ tsp pepper
2 tsp dijon mustard
¼ cup chia seeds
½ cup unsweetened coconut
2 eggs, large beaten
Directions:
Preheat oven to 450 degrees. Line large baking sheet with parchment paper. In one small bowl, mix ground almonds, salt and pepper. In a separate small bowl, whisk together the eggs and 2 tsp dijon mustard. In a third bowl combine chia seed and coconut. Dip each strip into ground almonds. Next coat with egg mixture. And then dip into chia and coconut on both sides and place on prepared baking sheet. Bake for 10 minutes on one side, flip each tender and continue to cook for another 10-15 minutes or until golden brown.
