Avocado Chicken Flatbread
Don’t let the word flatbread scare you! I know sometimes we’re all craving a little sandwich in our lives and this one is totally approved and can be made in 10 minutes or less!
Ingredients:
4 oz cooked cut up chicken
1/2 cup mixed greens
1/4 red bell pepper cut
3 tbsp ground flax seed
1 tbsp water
1/4 tsp baking soda
1/4 tsp garlic powder
1/4 tsp paprika
himalayan salt to taste
1 tbsp coconut oil
1 egg
1/2 avocado
1 splash fresh squeezed lemon
Directions:
In a medium mixing bowl add all dry ingredients. Then mix in water, coconut oil and egg. Whisk until all the way blended. Smooth batter out evenly into a circle and heat up until fully cooked. Set aside to let cool. In a separately small bowl put your avocado and top with some fresh squeezed lemon and mix until avocado is smooth and easily spreadable. Spread avocado mixture onto freshly made flatbread. Top with mixed greens, cut up red bell pepper and cooked chicken and serve!
