Easy To Make Artichoke Recipes
Heck yes! These easy to make artichoke recipes are just in time for spring! Sharing with you my obsession with artichokes. The veggie is a good source of nutrients and vitamins C and K. Another fun fact: They’re number 7 on the USDA’s top 20 antioxidant-rich foods list. WOO HOO! Let’s get cookin’.
Oven Roasted Artichokes
Ingredients:
1 tbsp ghee
2 tbsp minced garlic
4 rosemary springs
2 artichokes
1 large lemon
Directions:
Preheat oven to 400 degrees. Fill a bowl with water and juice from 2 slices of lemon. Cut and clean artichokes and let soak for about ten minutes. Coat your cooking sheet with ghee. Place artichokes on cooking sheet and cover with garlic, lemon slices, and rosemary. Cover the food on the cooking sheet with foil and bake for 40 mins.
Artichoke Stuffed Mushrooms
Ingredients:
1 tbsp ghee
3 small portobello mushrooms
1 cup artichoke hearts
1 handful mixed greens
3 tbsp goat cheese
salt & pepper to taste
Directions:
Preheat oven to 375 degrees. Coat a cooking sheet with ghee. Cut off stems of mushrooms and place facing up on the sheet. In a bowl mix together the artichoke hearts, greens, salt and pepper. Fill each mushroom with the artichoke mixture. Top with goat cheese and bake for 15-20 mins!
