Eat the Rainbow – Rainbow Veggie Roast
Ingredients:
1 red pepper, chopped
1 sweet potato, chopped
1 yellow pepper, chopped
1/2 bushel broccoli, chopped
1/2 onion, chopped
Directions:
Mix together 3 tbsp olive oil, 2 tbsp apple cider vinegar, pinch cayenne pepper & pinch of himalayan rock salt. Drizzle over veggies, bake at 400 F for about 25 mins or until tender. Pair with your favorite protein for a meal!
Eat the Rainbow – Raw Rainbow Chopped Salad
Ingredients:
carrots
cabbage
celery
tomato
cucumber
2 hard boiled eggs
1 tbsp olive oil
juice of ½ lemon
pinch of pepper and rock salt
Directions:
Toss then enjoy!
Eat the Rainbow – Colorful Island Chicken
Ingredients:
2 tbsp coconut aminos
1 tbsp coconut oil
1 red pepper
2 spears pineapple, chopped
1 tsp paprika
Directions:
Pre-heat oven to 375. Season chicken breast with paprika and cook for 40 mins. Put coconut oil and coconut aminos on a medium-sized skillet on medium heat and saute peppers and pineapples until soft. Garnish your meal with 2 strips chopped green onion for that extra flavor.
