Gluten Free Spaghetti Recipe – Spaghetti Squash with Shrimp
January 4th is National Spaghetti day so I wanted to share with you a healthy gluten free spaghetti recipe to make in celebration! What a thing to celebrate, right? Trust me, you’ll be wanting to celebrate this Spaghetti Squash with Shrimp once you eat it!
Ingredients
1 small spaghetti squash, halved lengthwise and seeded
10 jumbo shrimps, peeled and deveined
1 tablespoon butter, room temperature
½ purple onion, diced
2 clove garlic, finely chopped
1/2 teaspoon fresh rosemary, finely chopped
1 teaspoon fresh thyme, finely chopped
2 tablespoons fresh cilantro, chopped
1 tablespoon fresh lemon juice, wedges for serving
1 teaspoon himalayan salt
freshly ground pepper
Directions
Preheat oven to 375F. Lightly salt and pepper prepared spaghetti squash, place cut side down on baking sheet. Roast the spaghetti squash until tender, about 45 minutes. Let cool.
Scrape squash with a fork to remove flesh in long strands. Place in a large bowl. Set aside.
Melt the butter in a pan on medium heat. Add garlic and onion, cook until golden brown, about 5- 7 minutes. Add shrimp and cook until opaque. Toss in rosemary and thyme, cook about 3 minutes Remove shrimp and set aside.
Add spaghetti squash, lemon juice, salt, and pepper. Stir to combine, for about 3 minutes. Add shrimp back in and any cooking juices. Remove from heat and toss until ingredients are well combined.
Garnish with cilantro and lemon wedges.
