Gluten-free Vegan Protein Balls
By now you probably know that I live a healthy, unprocessed lifestyle. But I had someone special come to visit with me who was vegan! I am by NO MEANS experienced with vegan recipes, but I knew that I had to make sure that when Keaira LaShae came to visit, I had something for her to snack on. I had to create something that had protein, taste good, was vegan, unprocessed, that would give us energy and help us recover from our workout!
These gluten-free vegan protein balls are seriously so delicious. Even if you’re not vegan or not looking for something gluten-free, you will LOVE these. Whenever I make them for my team, they don’t make it past a day. Even kiddos like them. They are super healthy for you and the consistency of them makes you feel like you’re eating a cookie-dough treat! Except you’re really eating a ball full of fiber and super-fruit! Here’s the recipe for these delicious gluten-free vegan protein balls….or sticky balls!
Gluten-free Vegan Protein Balls
Ingredients:
2 cups Almonds
1 cup Shredded Coconut
2 cups Medjool Dates
2 tbsp Coconut Oil
2 tsp Himalayan Salt
1 tsp Vanilla Extract
1/4 cup Goji Berries
1/3 cup Pumpkin Seeds
Optional:
Super Mindy and earplugs or headphones. HAHA
Directions:
Dump the almonds and coconut into your Vitamix or any other blender/food processor. Blend until it’s a crumbly mixture. Then add the dates, coconut oil, salt, and vanilla extract. Blend/mix again until it gets sticky. Once the mixture is sticky, transfer it into a bowl. Stir in goji berries and pumpkin seeds. Take a tablespoon size of the mixture and roll into a ball. Then dip into shredded coconut flake (cacao nibs, extra goji berries…whatever healthy option you want) and place on a plate or cookie sheet. Once the balls are rolled in coconut, freeze for about an hour. You can store in the freezer and when you want them to thaw, transfer them to the refrigerator.
