My friend Natalia taught me this recipe and in the video below you can see how we made these amazing gluten free vegan truffles!

What I love about Natalia Kern
Natalia represents so many things to me and all the people she has had the opportunity to touch in her lifetime. She was born in the Ukraine, she was raised in different parts of Eastern Europe and moved to the U.S. when she was just a young adult full of hope and big dreams.
I could go and on into her life story and how she has become who she is and all that she stands for, but I’ll have to save it for another time. In the meantime, I’ll just enjoy her presence in my kitchen, while she teaches YOU and ME how to make these amazing protein truffle balls.
One of the things I love about Natalia is not only did she develop her “My bikini plan”, but she did it with a lot of raw, vegan and vegetarian recipes. That is something I’m not accustomed to and definitely not one of my strengths.
Although I love unprocessed foods and plant based foods, I haven’t had to cook vegan or vegetarian for health reasons. Natalia likes these protein power truffle balls as a yummy post workout snack…but they can also do double duty as a decadent dessert!
The Protein Power Truffle Recipe
Below, please see all the ingredients you will need as well as instructions on how to make them. Remember, these consist of raw and unprocessed ingredients, antioxidants and super-foods.
You can be creative; using different seeds, nuts or fruits or by adding coconut flakes, protein powder or even bananas!
Simple and Easy-to-make recipe:
(4) Medjool dates soaked in filtered water for 20 minutes
¼ cup creamy, organic almond butter (or peanut butter)
1 TBSP Cacao powder
¼ cup Goji berries
1 TBSP Cacao nibs
1/3 cup raw pumpkin seeds (or sunflower seeds)
Now…
• Use your hands and mix ingredients above
• Roll into balls
• You can eat them right away, put them in the refrigerator or freezer for 15 minutes
