Happy Thanksgiving & Pumpkin Themed Recipes For You…

I hope everyone has a safe and happy Thanksgiving holiday with family and friends!

One of my FAVORITE parts of Thanksgiving is devouring my favorite dessert. I am NOT gonna lie… I LOVE pumpkin pie! For those of you who follow me regularly you know that as a celiac I can’t have gluten and I typically CHOOSE to stay away from other grains.

Here is a grain free, dairy free pumpkin pie that I will be making and I want to share it with you…

Here is what you will need for the CRUST:

  • 1 cup of almonds flour
  • 3 TBSP of coconut oil
  • 1 whole egg or 2 egg whites
  • 1 tsp cinnamon powder
  • 1 tsp ginger

Here is what you will need for the filling

  • 1 can of pumpkin (nothing added)
  • 3 eggs or 6 egg whites
  • 1/4 cup of honey
  • 2 tsp cinnamon
  •  1/4 tsp cloves
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/3 cup of almond milk

How To Make Healthy Pumpkin Pie

  1. Preheat oven to 325.
  2. Mix crust ingredients
  3. Coat pan with some coconut oil and press crust into bottom and sides of pie pan
  4. BLEND all of the the filling ingredients
  5. Cook the crust alone for 10 minutes and then remove and
  6. Add the filling to the pie crust
  7. BAKE for 60 minutes

Pumpkin Pie Smoothie

This is one of my FAVORITE tasting pumpkin themed whole food smoothies from my Juice and Smoothie book!

  1. Pumpkin Spice
  2. 1 cup ice
  3. 1/2 container greek yogurt (plain)
  4. 1/2 cup pumpkin
  5. 1 apple
  6. 1/2 banana
  7. Cinnamon to taste

Blend and enjoy!
