Healthy, Quick, Warm Breakfast Bowls
Brrrr…Baby, it’s getting cold outside! Mornings are rough to begin with; add in a cold winter chill and forget about it! Here are some healthy, quick, warm breakfast bowl recipes to help get you up and moving. Are you a sweet or savory lover? I got both covered:
Healthy, Quick, Warm Breakfast Bowls #1- Savory Turkey Bacon, Cheese & Egg Bowl
Ingredients:
1 tbsp olive oil
2 slices turkey bacon diced
½ small onion, diced
⅓ cup rolled oats
⅔ cup water
1 pinch sea salt
1 pinch black pepper
2 tbsp feta cheese
1 poached egg
fresh rosemary to garnish
Directions:
Heat oil in a small saucepan over medium heat. Add bacon and cook until crisp, about 2-3 mins. Transfer bacon to a small bowl and set aside. Add onion to oiled pan and cook, stir occasionally until soft about 3 mins. Stir in oats, water, salt, and pepper. Bring to a boil then turn heat to low and simmer until oats are tender, about 5 mins. Turn off heat and stir in bacon and cheese. Transfer to bowl. Top with poached egg & garnish with fresh rosemary.
*Poached egg tip* Heat your water but don’t boil, use the handle of a spatula or spoon to quickly stir the water in one direction until it’s all smoothly spinning around then drop your egg in. Turn off the heat, cover the pan, and set your timer for 4 minutes.
Healthy Quick Warm Breakfast Bowls #2- Sweet Fruit & Super Foods Bowl
Ingredients:
1 cup chopped pears (you can use any fruit you already have)
2 tbsp almond butter
1 tbsp chia seeds & granola
Add chopped fruit of choice to a glass container and sprinkle with cinnamon. Bake in the oven at 300 degrees for 15 minutes.
While fruit bakes, add almond butter, chia seeds and granola to a single-serving bowl. Top with cooked fruit and enjoy an easy, warm breakfast. For an extra yumminess top with a scoop of Greek yogurt or even some coconut whipped cream!
