Homemade Chicken Tortilla Soup
So you know we celebrate food holidays around here! Life is short- celebrate food! Right? Especially when it’s healthy, yummy, tasty food! I wanted to share this homemade chicken tortilla soup recipe with you for National Tortilla Chip Day because it just seemed fitting!
This one can be for the whole familia!
Serves 6
Ingredients:
2 lbs. boneless, skinless chicken breasts
6 cups chicken broth
2 large stalks of celery
1 jalapeno chile, chopped
1 clove garlic
2 tsp ground cumin
1 tsp salt
¼ tsp pepper
2 cups corn, fresh or frozen (cooked)
1 cup lightly packed cilantro
Juice of one lime
2 handfuls of crushed tortilla chips
1.5 avocado, chopped
Directions:
In a soup pot add chicken broth, celery, jalapeno, cumin, garlic, salt and pepper. Cook on medium heat until chicken is done. Remove the chicken from pot and let cool slightly. Shred the chicken and place back into pot, stir in corn, cilantro and lime juice. Divide into serving bowls and top with avocado and tortilla chips.
When eating chips, do you ever wonder to yourself how many tortillas you have consumed? I mean really think about it. Depending on the size of the tortilla, you can be consuming an entire tortilla by just eating 4 chips! And who only eats 4 chips when you’re eating, say, chips and salsa? NO ONE.
