Quick Zesty Salads
News flash: boring salads are SO two years ago! Whip up these delicious and zesty salads in only a few minutes. We can all use some zest in our lives!! So here are some quick zesty salads for you…enjoy!
Zesty Rosemary Salad
No one likes to eat the same boring salads…so we are about to have some crazy salad action with this one. Are you ready? This Zesty Rosemary Salad really awakens your taste buds. YUM.
Ingredients:
1 handful mixed greens
1 tbsp pomegranate seeds
1 tbsp rosemary fresh leaves
1 tbsp goat cheese
1 blood orange
4 oz chicken breast
Dressing:
2 tsp Dijon mustard, sea salt and fresh ground pepper to taste, 1/4 cup olive oil, 2 tsp white wine vinegar & 2 tbsp orange juice. This will leave you with enough for a few salads.
Directions:
Sprinkle with some of the dressing, then toss & enjoy!

Mango & Basil Side Salad
Ingredients:
1 oz chopped mozzarella
½ mango chopped
4 large basil leaves
3 tbsp lime juice
Directions:
Mix ingredients together. To make a complete, balanced meal, pair this with white fish!
Ginger Shrimp Salad
The Ginger Shrimp Salad from my Stay Lean Recipe series is one of my favorites! (Don’t tell the other salads. They don’t like it when I play favorites!) This gluten-free, healthy and unprocessed salad is so flavorful…I am sure it will become one of your faves too!
Ingredients:
16 jumbo shrimp
1 tsp. minced ginger
5 cups arugula
12 large strawberries, sliced
12 cherries, pitted & sliced
1 whole grapefruit, cut & sectioned
1 tbsp Olive Oil
Directions:
Sauté shrimp in a heated pan with 1 tbsp olive oil & minced ginger. Serve on bed of greens & fruit. Top with dressing.
For dressing, mix 3 tbsp olive oil & 2 tbsp balsamic vinegar
*Makes 4 servings
