Spring Roll Salad
Love this clean and healthy recipe with and Asian flare! I paired it with my spin on the typical “peanut” sauce. Try this spring roll salad and tell me what you think! Do you love it like I do?!
Ingredients
4 oz shredded boiled chicken
1/2 cup cabbage, chopped
½ cup carrots, shredded
1/2 avocado, cubed
½ cup scallions, sliced
¼ cup edamame
1-2 tablespoons cilantro, chopped fine
Ingredients for “peanut sauce”
½ cup water
1/2 cup almond butter
2 tablespoons coconut aminos
1 teaspoon garlic minced
1 teaspoon minced fresh ginger
Pinch of Himalayan salt
Pinch of red pepper flakes
Add into a food processor or blender and blend until smooth.
Toss, serve, and enjoy!
