Yummy Fat Burning Avocado Recipes
Yummy fat burning avocado recipes! Today we are talkin’ about avocados…because they’re the good kind of fat and are one of my FAVORITE healthy fruits to eat. Did you know they are a fruit?! They also have even MORE potassium than bananas! 🙂 Here are three of my favorite quick avocado recipes. WARNING: Might make you want to do a happy dance….back that Hass up!!! (LOL)
Citrus Avocado Shrimp Stack
1/4 cup rice
1/4 avocado, diced
1/4 grapefruit, diced
4oz shrimp
lemon juice
Directions: Cook rice and let rice cool. Once cooled, place 1/4 cup packed rice onto your plate. Dice up your avocado and your grapefruit and place in layers on top of the rice. Top with chilled, cooked shrimp. Squeeze fresh lemon juice over the entire stack. Enjoy!
Lettuce Avocado Wrap
1/2 cup shrimp, diced
1/2 cup tomato, diced
1/4 cup mango, diced
cilantro
romaine lettuce
lemon + lime juice
Directions: Wash and dry your romaine lettuce. Add diced shrimp, tomato, and mango on top of the lettuce leaves to create wraps. Top each with cilantro and fresh squeezed lemon+lime juice. Don’t like shrimp? Try it with chicken!
Avocado Sandwich
1 slice gluten-free bread
1/4 avocado
1 egg
cilantro
lemon juice
cayenne pepper (optional for spice)
Directions: Toast a slice of gluten-free toast. Mash your avocado on top. Add an egg cooked to your liking. Top with cilantro and lemon juice. If you like spice, add some cayenne pepper to the top!
Avocado Tips:
- How do you tell if an avocado is ripe? As soon as they are soft to the touch when squeezing.
- How do you keep an avocado from turning brown so quickly? Squeeze lemon juice on a cut avocado to delay the oxidation (browning) and if you’re storing the avocado in the fridge, keep the seed/pit with it!
- How do you make avocados ripen faster? Throw them in a bag with an apple or a banana.
