YUMMY Quick Gluten Free Healthy Snack #1 – Stuffed Figs
Ingredients:
3 figs
2 tbsp goat cheese
1 tbsp honey or agave nectar
1 tbsp granola
Directions:
Slice figs into quarters
Stuff with goat cheese
Broil for 4-5 minutes
Drizzle with honey and top with granola
YUMMY Quick Gluten Free Healthy Snack #2 – Ricotta and Blueberry Bowls
Ingredients:
2 cups ricotta
one egg
¼ cup almond flour
1 banana, mashed
1 cup fresh blueberries
Directions:
Preheat oven to 395 degrees
In a medium size mixing bowl combine all ingredients except the blueberries.
Divide the blueberries among 4 ramekins, just covering the bottom of each.
Pour the ricotta mixture over the top of the blueberries.
Bake until set and the ricotta starts to turn golden, about 20 minutes.
This can be served warm or cold.
Serves: 4
YUMMY Quick Gluten Free Healthy Snack #3- Cinna Apple Chips
Ingredients:
1 large apple
pinch of cinnamon
Directions:
Slice apple thinly, lay on cooking sheet & sprinkle cinnamon.
Bake the slices for 1- 1 1/2 hours at 250 degrees.
